Mint Chip Brownies

Ingredients
  

  • 1 cup shredded carrots
  • 4 eggs
  • ½ cup melted coconut oil
  • ½ cup coconut sugar
  • ½ cup cocoa powder
  • ½ cup tigernut flour
  • ¼ cup almond butter
  • 1 tsp vanilla
  • ½ tsp baking soda
  • 10 drops peppermint oil
  • ¼ tsp sea salt
  • ½ cup chocolate chips

Instructions
 

  • Preheat oven to 375°.
  • Grate carrots, or use a shredding attachment on your food processor to get the job done.
  • Add all ingredients except chocolate chips to a food processor or blender.
  • Blend on high for about a minute, or until all ingredients are well blended.
  • Grease an 8x8" baking dish and dust with tapioca or arrowroot flour.
  • Add batter to the dish, then sprinkle chocolate chips on top.
  • Bake for 20-25 minutes.
